  1. 1. Cook the add-ins

    • Corn: Steam for 5 minutes. Spread on a plate to cool.
    • Bulgur and couscous: Cook together in boiling salted water for 10 minutes. Drain well; spread to cool.
    • Edamame: Blanch in boiling water for 2 minutes. Drain and rinse under cold water to cool.
  2. Make the dressing

    Whisk or blend olive oil, lemon juice, honey, Dijon, garlic, salt, and pepper until emulsified. Adjust sweetness, acidity, and salt to taste.

  3. Assemble

    • In a large bowl, combine cooled corn, black beans, bulgur and couscous, cucumber, bell peppers, red onion, green onions, parsley, and edamame.
    • Drizzle over the dressing and toss gently until evenly coated.
